The grapes came from all over Wellington, one of our warmer wine producing areas, and were harvested at optimum ripeness and fermented at 13 degrees Celsius in large Stainless steel tanks. After fermentation the wines were blended. The blend was made up from different tanks, all 2005 Chenin blanc’s. The grapes came from various wine producing farms in the Wellington district. The main goal was to create the perfect summer wine. We wanted a wine which is fresh and fruity, not too serious, with heaps of fruit – abundant amounts of guava, litchi, pineapple and hints of grass. Well, needless to say, that is almost exactly what we achieved with this wine. The flavour profile is spot on, but at the end of the day we actually made a wine which is full bodied and serious. Be bold and trade your beer in for a glass of this! Only 4500 bottles available. Analysis: Alcohol: 12.97% pH: 3.47 Acid: 5.8 g/l Residual Sugar: 5 g/l Ageing potential: Immediate consumption.
