Merlot (75%), Cabernet Sauvignon (15%) and Shiraz (10%). All the vineyards are characterised by well-drained soils which are mainly of granitic origin. The grapes were very healthy, hand-picked, de-stemmed, lightly crushed and fermented in open-topped tanks. The 3 components were matured separately in small French oak barrels for 12 months before being blended and returned to barrel for a further 6 months. Analysis: Alcohol: 14.73% pH 3.81 Acid 5.5 g/l Residual Sugar 2.38 g/l Ageing potential Optimum – 3 to 5 years.
